Segovia in a dayThe usual three, in a straight uphill line: the Roman aqueduct, which holds together without a drop of mortar; the cathedral, the last Gothic one built in Spain; and the Alcázar on its crag. Half an hour by train from Madrid.1 day· 3 stops
Segovia in two daysDay two leaves the city: La Granja de San Ildefonso, with twenty-six fountains that only run a few days a year, the Riofrío palace among holm oaks and deer, and the Vera Cruz, a twelve-sided Templar church from the thirteenth century.2 days· 6 stops
Segovia in three daysAdd Pedraza to the first two, an hour away by road: a walled village with a single gate, an arcaded square and a castle, where you go to eat lamb from a wood-fired oven. Book a table, especially on a Sunday.3 days· 7 stops
Segovia in four daysThe province. In come the Duratón gorges, a canyon with Europe's largest griffon vulture colony and a twelfth-century hermitage above the meander; Pedraza, walled and with a single gate; and the Royal Mint, the oldest industrial factory still standing in Europe.4 days· 9 stops

They do not work daily: there is a calendar of specific dates, almost all between late spring and summer, and only then do you see what they were built for. Check it before fixing your travel dates, because it is the difference between pretty gardens and an 18th-century hydraulic spectacle.

In Segovia and Pedraza the roast houses fill Sundays and holidays weeks ahead, and several wood-fired ovens only cook the roasts that were ordered. Ringing on the day is usually too late. And eat at midday, not at night: here a roast is lunch, and many ovens do not even open for dinner.
